- Chicken - Chicken Broth - Parsley - Oregano - Cilantro - Garlic - Jalapeno - Red Pepper Flakes - Salt and Pepper - Red wine vinegar - Olive Oil
Add chicken breasts to the instant pot and cover with chicken broth. Seal and set to manual, high power for 12 minutes.
Add parsley, oregano, cilantro, garlic, jalapeno, black pepper, red pepper flakes, and sea salt to a food processor and pulse to form a paste.
Stir in olive oil, red wine vinegar, and liquid smoke. Set aside 3 tbsp of the chimichurri sauce. Stir chimichurri sauce into the shredded chicken breast.
