Sous Vide Pork Roast is one of my favorite ways to cook up a pork shoulder roast. This sous vide roast is perfectly cooked for a moist and flavorful roast.

I created a simple pork rub I rubbed all over the roast to help lock in flavor.

What Is Sous Vide Cooking?

Sous Vide is an immersion cooking that cooks meat and other recipes in hot water. This is a French method of cooking that infuses flavor and provides moist delicious meat.

Water bath cooking is new to me, and I have to admit I am falling in love with it. Vacuum seal up your meat, drop in the temperature-controlled sous vide, and cook as directed.

How long to sous vide roast

You will make sure your sous vide temp is set at 145 degrees. Then you will cook your pork in the water bath for 24 hours.

This is going to fully cook your roast and infuse all the spices you rubbed all over the roast.

Once you are done, pat dry and then you will finish off roasting your pork roast in the oven. It helps lock in even more flavor to your pork roast and you can roast up vegetables to pair with it.

Can you overcook pork sous vide?

The beauty of water bath cooking is you control the temperature. You set it at 145 degrees, which means your pork can not go any hotter than that.

So that means, no overcooked or dried-out pork. You will pat it dry and sear of course, or roast in this case. That is when you run the risk of overcooking your pork.

Can I leave my sous vide unattended?

Go ahead and walk away from your vide if you want. Treat it like you would a crockpot or even your pressure cooker.

I don't like to leave the house if I have one running, but you can carry on with your day, and just randomly check. Of course since this cooks for 24 hours, you will be sleeping for a portion of cooking.

Make this Sous Vide Pot Roast with roasted root vegetable. This tasty and healthy meal is rave-worthy.

Prep Time 10 minutes
Cook Time 1 day 15 minutes
Total Time 1 day 25 minutes

Instructions

    1. Fill a large container or pot with water and attach the sous vide circulator to the side. Set the temperature to 145°F and the cook time to 24 hours.
    2. While the water bath heats up, combine the dry rub ingredients in a small bowl. Rub the spice mixture into each pork shoulder section until each side is thoroughly coated.
    3. Place the seasoned pork into a large airtight plastic bag. Remove as much air as possible from the bag while sealing.
    4. Once the water bath reaches the set temperature, add the sealed bag. (The bag should sink if enough air has been removed). Adjust the sous vide timer back to 24 hours, if necessary.
    5. Approximately one hour before the pork is done, pre-heat the oven to 400°F and line a large, rimmed baking sheet with parchment paper or a Silpat baking sheet. Set aside.
    6. Combine the beets, fennel, and red onion in a large bowl. Add the olive oil, fresh thyme, and garlic powder. Season with salt and black pepper, to taste, and toss to combine.
    7. Spread the seasoned vegetables onto the prepared baking sheet into a single layer without overcrowding. Place in the pre-heated oven and roast for 15 minutes before turning the vegetables. Return to oven and continue roasting for another 15-20 minutes or until nicely browned and fork tender. Remove from oven and set aside.
    8. When the sous vide cook time is complete, remove the pork from the water bath and discard the liquid in the plastic bag. Transfer the pork to a plate and pat dry with a paper towel.
    9. Heat two tablespoons olive oil in a large skillet over medium-high heat and add the pork roast. Sear on each side until golden brown, approximately 2-3 minutes per side.
    10. Remove from heat and rest for 5 minutes before slicing. Serve immediately with the roasted root vegetables on the side. Enjoy!

Notes

Tip: Cut all vegetables approximately ½” thick for this recipe.
