What I really love about this simple chicken recipe is the added flavors of the heirloom tomatoes & fresh mozzarella. Each bite reminds me of summer and has me longing for the days of fresh tomatoes from the garden.

If you're lucky enough to have a garden during the spring and summer months of the year, fresh tomatoes bring a whole new flavor to this delicious dish.

You're going to store this leftover chicken recipe just like you would any chicken recipe. Place it in the fridge to keep it cool until you're ready to heat it up and eat it again.

I would also store the chicken separately from the mixed greens and tomatoes or you're going to find out that it's going to make a big soggy mess. You can always combine them together later when you're going to actually eat them again.

This boneless skinless Sous Vide Chicken Breast Recipe is such a wonderful dish.

Prep Time 15 minutes
Cook Time 1 hour 15 minutes
Total Time 1 hour 30 minutes

Instructions

    1. Fill a large pot with water and put the sous vide circulate on the side. Set the temperature to 145 degrees and put the cooking time on 1 hour and 15 minutes.
    2. As the water bath is heating up, season the chicken breasts with the Italian seasoning and salt and pepper.
    3. Put the chicken breasts in a plastic bag and get as much air out as possible before sealing.
    4. Once the water gets to 145 degrees, put in the sealed bag of chicken. If the bag sinks, this means that you got the air out. Reset the timer back to 1 hour and 15 minutes.
    5. When there is just a little bit of time left, make the salad by putting the greens, fresh mozzarella and tomato slices on plates.
    6. Once the cooking time is done, take out the chicken breasts and discard any liquid that might have gotten into the plastic bag. Put the chicken on a plate and pat dry.
    7. Heat up a bit of olive oil in a skillet on medium-high heat and sear both sides of the chicken for about 3-4 minutes each.
    8. Take off heat and let rest for 5 minutes. Add to salads and serve with olive oil and balsamic vinegar.
