Ingredients

- Instant Pot with sous vide
- Other sous vide
- Food saver

Sous Vide Chicken
- 1 1/2 pounds boneless, skinless white chicken meat
- 2 teaspoons of Italian seasoning
- Sea salt, to taste
- Black pepper, to taste
- 1 tablespoon extra virgin olive oil
Salad Ingredients
Instructions
- Fill a large pot with water and put the sous vide circulate on the side. Set the temperature to 145 degrees and put the cooking time on 1 hour and 15 minutes.
- As the water bath is heating up, season the chicken breasts with the Italian seasoning and salt and pepper.
- Put the chicken breasts in a plastic bag and get as much air out as possible before sealing.
- Once the water gets to 145 degrees, put in the sealed bag of chicken. If the bag sinks, this means that you got the air out. Reset the timer back to 1 hour and 15 minutes.
- When there is just a little bit of time left, make the salad by putting the greens, fresh mozzarella and tomato slices on plates.
- Once the cooking time is done, take out the chicken breasts and discard any liquid that might have gotten into the plastic bag. Put the chicken on a plate and pat dry.
- Heat up a bit of olive oil in a skillet on medium-high heat and sear both sides of the chicken for about 3-4 minutes each.
- Take off heat and let rest for 5 minutes. Add to salads and serve with olive oil and balsamic vinegar.
