Notes

If you are using fresh artichokes instead of canned ones, the edible parts of an artichoke are the leaves and the heart. It does not matter if they are round or elongated, look for the pieces that are compact, feel heavy for their size and have tightly closed, fleshy, and firm leaves; discard those that have brown spots or the stem feels soft.
