Now, this is one of our favorite Instant Pot soup recipes and can be made in any pressure cooker. We often make soup in Ninja Foodi pressure cookers too. This pressure cooker soup works great in the Ninja Foodi.

As with a lot of Instant Pot vegetable soup recipes, you can always make it a creamier soup by blending with an immersion blender.

  • Onion
  • Cloves
  • Salt & Pepper
  • Chicken Or Vegetable Broth
  • Asparagus
  • Bay Leaf
  • Heavy Cream

How to Make Asparagus Soup

Start by turning on the saute feature and add in your onions and oil to saute. Season with salt and pepper and cook your onions down.

Then you will add in the garlic at the end and cook until fragrant.

Pour in your broth and deglaze the bottom of the pot with a wooden spoon. Once deglazed turn the saute feature off.

Add in the remaining ingredients except for the heavy cream and pressure cook for 5 minutes. Then allow the pressure cooker to natural release once done for 10 minutes.

Remove lid and toss the bay leaf. Then you will temper your soup with the heavy cream. Then serve up this creamy and rich cream of asparagus soup recipe

How to clean asparagus?

The first step is to rinse your asparagus in cold water to remove any dirt or debris. Snap off the bottom inch or so of the asparagus to remove the woody portion.

If you don't want to snap it off, you can cut it off with a knife.

How to cut asparagus?

You always want to cut off the bottom ends of the asparagus, making sure you remove the tough end. You can cut off small amounts of the end at a time to make sure you don't take off too much.

How do you get the sand out of asparagus?

Soak your asparagus in cold water for 15 minutes if you find that your asparagus seems a bit sandy. This will help, then rinse off before moving to the next step of trimming asparagus.

How to tell if asparagus is bad?

Look at the tips of your asparagus to see if they are starting to turn brownish and soften in texture. That is the first sign your vegetable is spoiling.

The other thing is to feel the vegetable. It needs to be firm and not flexible when you go to bend it.

Can you freeze asparagus?

You are more than welcome to freeze the asparagus if you would like. You can freeze asparagus prepped, or in the soup form.

If you do the soup, leave the heavy cream out, or it will curdle once it begins to thaw.

Asparagus Soup

Whip up this delicious creamy asparagus soup in no time when you make it in a pressure cooker. You can use chicken broth, bone broth, or vegetable broth in this healthy soup recipe.

Prep Time 15 minutes
Cook Time 10 minutes
Natural Release Time 10 minutes
Total Time 35 minutes

Instructions

    1. Select saute on your pressure cooker and add butter once hot. Add in the onion and then season with salt and black pepper, to taste. Cook, stirring occasionally until onions develop a bit of color and soften approximately 4-5 minutes. Add garlic and sauté for an additional minute.
    2. Pour in broth and deglaze the bottom of the pot, gently scraping up any brown bits off the bottom of the pot with a wooden spoon in the process. Turn unit off.
    3. Add asparagus and bay leaf, and stir to combine. Close the lid and then set for a manual cooking time on high pressure for 5 minutes.
    4. When cook time is complete, allow pressure to release naturally for 10 minutes, then manually release any remaining pressure. Remove lid and discard bay leaf.
    5. To prevent curdling, temper the heavy cream by adding a small amount of the hot liquid to it before stirring it directly into the pot. Stir to combine.
    6. Carefully transfer asparagus mixture to a food processor or high-powered blender and process until smooth. To serve, transfer hot or chilled soup to individual bowls and garnish with a few drops of heavy cream and a couple of reserved asparagus tips if desired.

Notes

  • Reserve a few asparagus tips for garnish prior to cooking.
  • For a vegan variation, substitute olive oil for butter and full-fat coconut milk for the heavy cream.
