When it comes to mixing the ingredients for your meatloaf, less is more. If you overmix the meatloaf, it will become tougher and denser.

The ideal way to do it is to combine all the ingredients together into the meat and then mix them all in one go instead of adding them one after the other, continuously mixing.

How Can I Make My Turkey Meatloaf Recipe Moist?

If your meatloaf ends up dry and crumbly, no matter what you do, there are a lot of different hacks and ideas to ensure that doesn’t happen and that your meatloaf has the perfect, soft texture. 

First, consider using fatty meat instead of lean meat since lean meat tends to dry out quickly when cooked.

If you’re using lean meat (like we’re doing with this one), add enough seasonings and wet ingredients like soy sauce, BBQ sauce, Worcestershire sauce, ketchup, etc.

Another essential tip to remember is to use stale breadcrumbs as opposed to fresh breadcrumbs- that’s because the fresh breadcrumbs will soak all the moisture from the meat mixture and cause your meatloaf to become dry. 

What Will Happen if I Don’t Put Breadcrumbs in the Meatloaf?

If you don’t have breadcrumbs or just don’t want to use them in your meatloaf, you must replace them with eggs or oats. Breadcrumbs are typically used as a binding agent for your meatloaf, and without it, the meat might fall apart. 

Why Should I Soak the Breadcrumbs?

Okay, so adding breadcrumbs is one part of the story, but why do I need to soak the breadcrumbs in the first place?

Well, that’s because soaking the breadcrumbs in milk for a few minutes helps them retain a lot of moisture, which doesn’t just help bind the meatloaf but also keeps it moist and tender. 

Why Do I Need to Let My Turkey Meatloaf Recipe Rest?

It might be dinnertime, and the meatloaf might be smelling just too good for you to resist, but letting it rest is another crucial step you need to follow.

Slicing your meatloaf as soon as you get it out of the oven is a common mistake many people tend to make, and doing that releases the delicious juices in the meat straight into the pan. 

Instead, let the meat rest in the pan for 15 minutes before you slice and serve- that way, you’ll enjoy a more flavorful and juicy meatloaf.

Instant Pot Turkey Meatloaf and Mashed Potatoes

Instant Pot Turkey Meatloaf and Mashed Potatoes recipe is so easy and the mashed potatoes are cooked at the same time as the meatloaf, saving you dishes and time. Try it, it is delicious!

Prep Time 10 minutes
Cook Time 35 minutes
Additional Time 10 minutes
Total Time 55 minutes

Instructions

  1. Place cubed potatoes in the Instant Pot, along with 1 cup of water.
  2. Place the trivet on top of potatoes.
  3. In a large bowl, combine all meatloaf ingredients, except the ketchup.
  4. Mix the meatloaf ingredients until nicely combined and then form into a loaf. Spread desired amount of ketchup on top of loaf.
  5. Place the meatloaf in a foil boat and set on the trivet in the Instant Pot.
  6. Pressure cook on high for 35 minutes. Do a quick release and carefully remove the meatloaf from the pot.
  7. Top with additional ketchup, if desired.
  8. Add milk, butter and salt/pepper to the potatoes and mash.
  9. Remove from the pot and serve alongside the meatloaf.

Notes

Tips and tricks

  • To save time you can use potato puree on the bag.
    Only prepare it according to the instructions.
  • The main ingredients are potato and meat, so choose a good quality product. Then you will be rewarded with the final result.
  • This cake can also be done with beef or chicken. Or instead of potatoes, you can accompany with rice and salad.
