I love this Red, White and Blue Cheesecake. It's an Instant Pot Cheesecake recipe and this Instant Pot dessert is perfect for the upcoming 4th of July, Memorial Day, or Labor Day holiday, or just a great way to show your patriotic pride. Plus, when you get to use your Instant Pot for making a delicious dessert, it's easy and simple to clean up as well.

How do I know when my Instant Pot cheesecake is done?

You're actually going to want to jiggle the cooked Instant Pot to see if it's done. If the center of the cheesecake jiggles just a little bit, it's a big indicator that it's done and ready to cool down, set up, and enjoy.

Another way to ensure your cheesecake is cooked is to check the internal temperature.

Your cheesecake needs to reach 150 degrees for it to be fully cooked and safe to serve. You don't want to serve an undercooked cheesecake.

Can you use any springform pan in the Instant Pot?

You'll need to be certain that you choose a size that fits inside your Instant Pot. The most common is the 7-inch Springform Pan but there are other sizes like the 9-inch pan that fits in the larger Instant Pot as well.

Do you have to use a springform pan for cheesecake?

If you're wanting it to turn out properly and set up, you're going to want to use a Springform Pan or a push pan. It holds it in place and gives it that nice cheesecake shape.

Can you freeze Instant Pot cheesecake?

You can! You just need to be certain that you have it stored in a freezer-safe container and then you can add it to your freezer without worry. Once you're ready to eat it, you just need to move it to the fridge to let it thaw.

Crust ingredients

  • 2 cups crushed graham cracker crumbs
  • ¼ cup unsalted butter, melted
  • 2-3 drops of sky blue gel food coloring

Vanilla cheesecake ingredients

  • 16 ounces cream cheese, softened
  • ½ cup sugar
  • 1 tablespoon cornstarch
  • 2 large eggs
  • 2 teaspoon pure vanilla extract

Whipped cream ingredients & topping

  • ½ cup heavy whipping cream
  • ¼ cup powdered sugar
  • 8 ounces of cherry pie filling

How To Make Patriotic Cheesecake

Crust| So the first thing you are going to work on is the graham cracker crust. You will use blue food coloring to change the color of the graham crackers.

Press it down into your pan and pack it in so it is nice and tight.

Cheesecake Batter | Now you will follow the basic steps to make this vanilla cheesecake. Once you get it fully mixed, pour into the pan, cover tightly and cook.

Pressure Cook | Follow the directions below and then pressure cook for 40 minutes followed by 20 minutes of natural release.

Chill | Let the cheesecake cool down, and then transfer to the fridge and allow it to set up overnight.

Topping | Then you can decorate the top of your cheesecake with cherry pie filling, and an edge of frosting or even whipped cream that is piped.

How Long Will Cheesecake Store For

This cheesecake can be stored in the fridge for up to a week. You will find it will dry out a bit. I recommend eating within the first few days.

If you don't plan to eat it all right away, then freeze any cheesecake in slices for up to 3 months.

Variation for This 4th of July Cheesecake

Crust | Consider swapping graham crackers with Golden Oreos or even vanilla wafers. You can add food coloring to either of these two crusts.

Cheesecake Topping | Consider a different topping. While I love a classic cherry pie filling, go for a blueberry, or even strawberry.

Swirl Cheesecake | You could even puree some fruit and swirl in some fruit into the cheesecake for added flavor if you want.

Sprinkles | Add on festive sprinkles that fir the patriotic sprinkles.

This is a fun red white and blue dessert but feel free to leave the food coloring out if you just want a tasty plain cheesecake as well.

Instructions

How to Make Crust

  1. 1. Line the bottom of a 6-inch springform pan with parchment paper and spray the sides with baking spray.
  2. Using a large bowl mix the melted butter and graham cracker crumbs.
  3. Mix in the blue food coloring until combined.
  4. Press the crust into the springform pan.
  5. Place into the freezer while you make the cheesecake mixture.

Cheesecake Directions

  1. In a small bowl, whisk together the sugar and cornstarch until combined.
  2. In a large bowl using a hand mixer, beat together the cream cheese and sugar mixture until combined and smooth.
  3. Beat in the eggs 1 at a time until combined.
  4. Beat in the vanilla extract.
  5. Pour cheesecake mixture into the crust.
  6. Cover with foil.
  7. Fill the Instant Pot with 1 cup of water.
  8. Place a trivet inside. Place the springform pan onto the trivet.
  9. Close the lid and set to sealing.
  10. Bake on manual setting high pressure for 40 minutes. Once timer goes off allow to natural release for 20 minutes.
  11. Remove the lid and use a paper towel to dap onto the foil to remove condensation.
  12. Carefully remove from the pot and place onto a wire rack and allow to cool completely.
  13. Place into the fridge overnight.

Whipped Cream Directions

  1. Before serving, use a hand mixer to beat together the heavy whipping cream and powdered sugar until stiff peaks form.
  2. Pipe dollops along the edge of the cheesecake.

Topping Directions

  1. Scoop cherry pie filling into the center of the cheesecake.
  2. Cut and serve!

Notes

Patriotic Cheesecake Variations

  • Switch up the blue food coloring in the crust to color coordinat with your cheesecake topping.
  • Switch up the cherry pie topping for blueberry, apple pie, peach, or something else.
