How to Make Minestrone Soup
Saute your garlic and onions with the oil in the pressure cooker. I almost always use a garlic press instead of mincing the garlic by hand. I've found it to be such a time-saver.
Now prep and dice all your veggies and pour into the Instant pot along with the other ingredients. Stir and then cook for 5 minutes.
You might need to do a self-controlled release if you find a quick release spews too much liquid.
What is a self-controlled release?
When you are making soups you might find doing a straight quick release causes tons of liquid to spew out of the valve. Self control releasing is where you slowly open the valve a little at a time to control how much liquid is released.
This takes longer to do, but it will save you a ton of mess. If you haven't made soup before and do a quick pressure release, you might be surprised by how much liquid is spewed out in a quick release.
Tips and Variations to Vegetarian Minestrone Soup
- Add in smaller sized pasta to cook with the rest of the ingredients for a more traditional Italian soup.
- You can add ground beef that is pre-cooked and crumbled for meat. We use this recipe to make ground beef and taco meat for meal-prep. Just leave the taco seasoning out, and you have pre-cooked ground beef to use throughout the week.
- Play around with vegetables used to create a soup that fits your liking.
- Serve with French bread and butter, dinner rolls, or even a salad.

To make this soup Whole30 and low carb, you need to leave out the beans, pasta, and carrots. You can replace it with cauliflower and then stir in greens after your soup is done cooking. It will slowly wilt the greens making it the perfect texture.
Storing Leftovers
You can store your soup in the fridge for up to 5 days. Then just reheat in the microwave, stovetop, etc. This soup is wonderful for reheating and meal prepping with.
Freezer friendly
Also, you can freeze your soup if you don't plan to eat it all right away. Pour in proper containers and freeze for 2-3 months. Leave room for the soup to expand a little as it freezes.
Then thaw in the fridge overnight before you warm it up. The veggies will be a bit softer in texture once reheated, but overall a delicious soup!

Instant Pot Minestrone
Instant Pot minestrone soup is an easy soup recipe full of healthy ingredients.

Minestrone Ingredients
- 1 tablespoon olive oil
- 1 white onion, diced
- 2 tablespoons minced garlic
- 4 stalks of celery, diced
- 1 zucchini, diced
- 1 1/2 cups sliced carrots
- 10 small red potatoes, quartered
- 28-ounces crushed tomatoes
- 15.5-ounce can no-salt red kidney beans, drained
- 14-ounce can white cannellini beans, drained
- 1/2 bundle of italian parsley, chopped
- 1 teaspoon oregano
- 2 teaspoons salt
- 2 teaspoon cracked black pepper
- 32 ounces low-sodium vegetable broth
Instructions
- Set the instant pot to saute mode. Add in onion and garlic. Saute 2 minutes. Add in carrots, celery, and zucchini. Stir well.
- Cut red potatoes and add to the pot. Pour in stewed tomatoes and drained beans.
- Turn off saute mode. Add in broth, parsley, and oregano. Give it a good stir. Add in salt and pepper. Stir well.
- Place the lid onto the instant pot. Press pressure cook or manual and set timer to 5 minutes. Turn valve to sealed position.
- Once the pot stops counting release the press from the valve. If it spews liquid then do a slow controlled release.

Variations to IP Minestrone
- Use bone broth for added health benefits if not on a vegetarian diet. As is, this is an Instant Pot vegetarian soup recipe.
- Add in 1/2 cup of dry macaroni to make this a pasta soup recipe.
Can I Make Crockpot Minestrone Soup?
Yes, you can make Italian minestrone soup in a slow cooker or crockpot. Add in all the ingredients and let the soup slow cook for 4-6 hours on low. The potatoes should be nice and fork-tender to serve. While Instapot soup is fast, soup in the crock pot has the benefit of letting you put all the ingredients in the pot in the morning and enjoy the cooking aromas throughout the day.
