Is Egg Drop Soup Vegetarian?

While this Instant Pot egg drop soup isn't a vegetarian egg drop soup recipe, you can simply switch out the chicken broth for a vegetable broth to make it a vegetarian recipe.

Instant Pot Egg Drop Soup is a delicious authentic egg drop soup recipe made from scratch with whole ingredients and not a mix. This is a delicious soup to serve as a starter for an Asian-inspired dinner, or serve the soup on its own.

Ingredients for Keto Egg Drop Soup

  • 32 ounces chicken broth
  • 2 eggs
  • 1 tablespoon soy sauce
  • 3 teaspoon ginger paste
  • 1/2 teaspoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 4 green onions, sliced thinly
  • 1/2 teaspoon red pepper flakes

Instructions

    1. Add Instant Pot egg drop soup ingredients to your inner pot: chicken broth, soy sauce, ginger paste, olive oil, garlic powder, and salt. Stir well.
    2. Close the Instant Pot lid and make sure the sealing valve is turned to sealing.
    3. Set to a high pressure cooking time of 1 minute.
    4. When the cooking time finishes, do a quick pressure release to release all the steam.
    5. Whisk the eggs in a small bowl.
    6. Open the Instant Pot and slowly whisk the broth mixture, and with your other hand, pour the beaten eggs into the soup broth slowly, whisking as you pour.
    7. Add the green onions and stir.
    8. Serve hot as a starter soup, or as a main dish soup recipe.

Notes

Make this a vegetarian Instant Pot egg drop soup recipe by switching the broth to a vegetable broth. This will change the flavor of the soup some, but it will still be a tasty soup recipe.
