What is Irish beef stew?

Irish beef stew is a hearty and filling beef stew that is full of vegetables, tender stew meat, and a savory beef and beer broth. Guinness beer takes front stage in this hearty beef stew with beer recipe.

How To Make Instant Pot Guinness Beef Stew

Start by adding your diced bacon into the pressure cooker and saute it until cooked crispy. Then you will toss in the white onion to saute as well.

Once the bacon is done, add in your stew meat, and cook until it is lightly browned if desired. I highly recommend this, but it is optional depending on the amount of time you have.

Next, stir in the beef broth, and use a wooden spoon to deglaze the bottom of the pan. Make sure you get all stuck on food off of the bottom of the pan so you won't get a burn notice.

Add in the vegetables, beer, and add more broth if your vegetables and meat are out of the water. Cover to just barely cover the meat and veggies. We used beef broth in this recipe, but you could also use our homemade Instant Pot bone broth.

Toss in the herbs along with salt and pepper. Place lid on and make sure the valve is set to sealing.

Cook high pressure for 25 minutes and do a quick release of pressure. Create your cornstarch slurry and stir into the mixture to allow it to thicken the sauce.

Once thickened serve up this homemade stew.

Why Do You Sear Beef For Stews?

You will find some recipes recommend searing the beef before you cook it, and others don't. With any recipe you can take the time to season your beef before you pressure cook it.

Searing the beef helps to lock in a ton of flavor and it provides a nice texture to the beef. I highly recommend always searing your meats.

Can I Make This an Irish Lamb Stew

Some Guinness recipes feature lamb instead of beef. You are welcome to swap the meat out if you would prefer. We just enjoy beef over lamb in terms of flavor.

You could also transform this into an Instant Pot venison stew if you would like, by adding venison in instead of beef.

Storage

This beef stew with beer will store for up to 3 days in the refrigerator. You can then reheat in the microwave, warm up the beef stew on the stovetop, or toss leftovers in a slow cooker to slowly warm it up.

Instant Pot Guinness Irish Beef Stew

Irish Beef and Potato Stew with Guinness beer is a delicious meat and potato comfort food recipe that is so full of flavor and absolutely rave-worthy.

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes

Instructions

    1. Place diced bacon into the instant pot and turn on saute mode. Cook bacon until crispy. If it starts to stick use a little beef broth to deglaze. Add in white onion and stir well. Add in a little beef broth and deglaze.
    2. Add in stew beef and cook until lightly brown on the outside of the meat. Turn off saute mode. Add in carrots and diced and peeled potatoes. Pour in one cup of Guinness and the remaining beef broth. If this does not cover your vegetables and meat then add water to just barely cover. Add in thyme and bay leaves. Add in salt and pepper. Stir well.
    3. Place the lid onto the instant pot. Set the valve to the sealed position. Press the pressure cook button or manual and set the timer to 25 minutes. Once the instant pot stops counting release pressure.
    4. Turn off the instant pot and turn on saute mode. Add in a cornstarch slurry (this is 3 tablespoons cornstarch whisked well with 3 tablespoons or so of water). Stir well and as it comes to a boil it will start to thicken the sauce around the stew. If it's still not thick enough you can add a little more slurry. Remember once you turn off saute mode and let it cool some it will thicken even more just like gravy.

Notes

The amount of cornstarch slurry can vary depending on the amount of liquid in the stew and how thick you'd like the stew to be. So you may need to make more slurry and add it. Just be careful so you don't over thicken since once it cools down it does thicken more much like gravy.

Can I make this a frozen stew meat Instant Pot recipe?

Yes, you can make this recipe with frozen stew meat. Just skip the step where you normally would sear the stew meat. The rest of the recipe will be the same. You can also do this to make a Ninja Foodi beef stew.

Crockpot Beef Stew

It is easy to make this a slow cooker beef stew recipe. Simply add all the ingredients to your crockpot and set to cook on low for 7-8 hours or high for 5-6 hours.

Variations to Irish Beef Stew

  • beef stew with turnips instead of (or in addition to) potatoes
  • Make it a Dutch oven beef stew or a beef stew stove top recipe - it is easy to adapt to both of these cooking methods.
  • Switch out the beef and make an Instant Pot lamb stew or Instant Pot chicken stew, or venison stew recipe instead.
