Instant Pot French Onion Chicken

How To Make French Onion Chicken
Start by adding your butter and oil into the Instant Pot on saute feature. Add in your spices and seasoning. Add in your onions and saute as directed in the recipe card.
Toss in the balsamic vinegar and deglaze the pot. Remove any stuck-on bits in the bottom of the pot. Once the liquid cooks down and reduce to half you will then add in the Worcestershire and broth.
Season the chicken liberally and place it in the pressure cooker. Top with thyme and your bay leaf.
Place lid on the Instant Pot and make sure the valve is set the sealing. Pressure cook for 6 minutes. Allow for a 5 minute release of pressure once the chicken is done.
Remove the bay leaves and thyme. Then place with the sliced cheese and let it melt down.
To make this as a French onion chicken casserole, you can transfer to a baking dish and broil in the oven until the cheese is nice and melted.
Then pair with mashed potatoes, rice, pasta, etc.
Can I Use Bone-In Chicken Instead of Boneless
Go right ahead and use bone-in chicken if you would prefer to do so. Now, you need to make sure to adjust the cooking time. You will need to cook your chicken for 12-15 minutes with a 5 minute natural release.
Make sure to use a meat thermometer to check to ensure the chicken is fully cooked. The thermometer needs to read 165 degrees internal temperature.
Just make sure to not touch the bone when checking the temperature or the cooking time will vary.
Alternative to Dry Red Wine
If you don't want to use dry red wine in your recipe go right ahead and swap with a beef broth. It will alter the flavor just a bit but overall but it will taste incredible just the same.
How to Reheat Your Chicken
If you have leftover chicken go ahead and reheat in the microwave. Or you can cover with aluminum foil and bake at 350 degrees until the chicken is fully heated.
Storing Leftover Chicken
If you have any leftover French onion chicken just store it in the refrigerator for 3-4 days.
If you don't plan to eat then you can freeze the chicken for up to three months in the freezer.

- 1 tablespoon extra virgin olive oil
- 1 pound yellow onions, sliced
- 1 teaspoon garlic powder
- ½ teaspoon Italian seasoning
- Sea salt, to taste
- Black pepper, to taste
- 3 tablespoons balsamic vinegar
- ½ cup dry red wine
- 2 teaspoons Worcestershire sauce
- 1¼ cups beef broth, preferably organic
- 2 bay leaves
- 4-5 fresh thyme sprigs
- 1¼ pounds boneless, skinless chicken, pounded ½” thick
- 6-8 slices mild Provolone cheese, thinly sliced
Instructions
- Select the “Sauté” function and adjust to the medium setting. Add the butter and olive oil and stir until butter is melted and evenly distributed across the bottom.
- Add onions and sprinkle with garlic powder and Italian seasoning. Season with salt and black pepper, to taste, and stir to combine. Sauté, stirring occasionally, until the onions are soft and develop some color, approximately 10-15 minutes.
- Add the balsamic vinegar and red wine, then deglaze the bottom of the pot with a spatula to release any browned bits. Once the liquid is reduced by one half, stir in the Worcestershire sauce, if using, and the beef broth. Push the “Cancel” button to turn the unit off.
- Season the chicken breasts on both sides with salt and black pepper, before adding to the pressure cooker. Top with bay leaves and fresh thyme sprigs.
- Add the lid and lock it into place, making sure the pressure release valve is set to “Sealing.” Select the “Manual” button on the highest setting and adjust the cooking time to 6 minutes.
- When the cooking time is complete, allow the pressure to release naturally for 5 minutes, then do a quick release for any remaining pressure. Once the pin drops and the steam is no longer coming out, carefully remove the lid and discard the bay leaves and woody thyme stems.
- Place the thinly sliced Provolone cheese on top of the chicken breasts and cover the unit with the lid for 2 to 3 minutes, or until the cheese is thoroughly melted. Remove lid and serve immediately with your choice of sides.
