Instant Pot Dulce de Leche Cheesecake Bites

They take just a few minutes of prep time and once in your instant pot, you don’t have to worry about them.

They can turn out to be the perfect delicious dessert you can whip up for yourself (when you’re in the mood to indulge in something sweet) or have some guests coming up. 

Ready to give them a try? Here’s what you’ll need, and some basics you’ll need to know beforehand. 

Instant Pot Cheesecake Supplies

  • 6-inch by 3-inch Push Pan or 7-inch by 3-inch Push Pan- I recently started using a high push pan instead of a spring-form pan. In my opinion, the cheesecake looks amazing this way.
  • Silicone Sling- This is an essential unless you want to make a sling out of foil every time you make a cheesecake or use a pan in the Instant Pot that needs to be lifted out.
  • Large Decorating Tips- I used a decorating tip and reusable icing bag to pipe frosting onto the top of the cake. It gives the cake a prettier, more professional style.
  • Reusable Decorating Bag- Do yourself a favor and invest in a nice reusable bag for decorating cakes and cupcakes. It works so much better than the disposable bags and is better for the environment. Even better, they are pretty inexpensive.
  • Parchment Rounds- Pre-cut parchment rounds (and squares) are available in a variety of sizes depending on your needs. This can be a huge time-saver so you don't have to measure and cut a circle out.

Can I Use Silicone Muffin Moulds Instead?

This recipe calls for the use of the single silicone mould, but if you don’t have that and instead, have those individual silicone muffin moulds instead, you could use those as well. 

Can I Turn it Into One Big Cheesecake Instead of Bites?

If you love the recipe but want to replicate the same in an entire cheesecake instead of these tiny bites, you could do that too. Simply use a springform pan instead of the silicone mould and you’re pretty much sorted. 

What Mistakes Am I Making with My Dulce de Leche Cheesecake Mixture?

For someone who’s new at baking cheesecakes, things can be a tad bit tricky. So here’s covering a few of the most common mistakes people make while baking a cheesecake. 

To ensure that the texture of your cheesecake is perfectly smooth and not grainy, you’ll have to make sure that all your ingredients are at room temperature. If they’re not, your cheesecake can end up grainy or lumpy. 

Just like custard, you can over bake your cheesecake very easily, and that will cause its texture to become dry.

Try to stick to the directions in the recipe and cook your cheesecake at a lower temperature, which will help the texture stay creamy and silky smooth.

Once your cheesecake is done, set it on your kitchen countertop and allow it to cool down completely before you pop it into the refrigerator. This will help prevent condensation on the surface.

It is best to refrigerate the cheesecake overnight before you go ahead and slice and serve it. 

While combining the ingredients for the cheesecake, always use a paddle attachment as opposed to the whisk attachment, and use a low speed setting.

Using a higher speed will actually just aerate the batter, which will ruin the texture of the cheesecake. 

When you’ve added all your ingredients into a large mixing bowl, make sure you scrape everything off the sides and ensure that everything has combined well.

Sometimes, when you add the ingredients, they may stick to the sides of the bowl, and if they’re not incorporated into the batter, they may cause the texture of the cheesecake to become uneven.

Instant Pot Dulce De Leche Cheesecake

Instant Pot Dulce De Leche Cheesecake

How about a dessert that gets ready in your Instant Pot in minutes? These Instant Pot Dulce de Leche Cheesecake Bites are perfect for just that!

Prep Time 10 minutes
Cook Time 4 minutes
Additional Time 15 minutes
Total Time 29 minutes

Instructions

  1. In a gallon ziploc bag, place your crackers. Let out the air, close the bag, and use a rolling pin to make crumbs.
  2. Melt your butter at 30 second increments in the microwave until melted. 
  3. Mix the crackers and butter together. 
  4. Take 1 1/2 tablespoon of the crust mixture, and place them into each mold. Press down firmly. Set your mold aside
  5. Beat together your cream cheese, sugar, vanilla, and dulce de leche until well mixed. Then add eggs. Mix well again. 
  6. Take 3 tablespoons of the cheesecake batter and add to the molds on top of the crust. 
  7. Add 1 cup water to the Instant Pot. Place the trivet into the Instant Pot.
  8. Cover your silicone mold with a paper towel first, then aluminum foil. Tightly wrap the aluminum foil to keep heat in while cooking.
  9. Add the silicone mold to the Instant Pot on the trivet. Close and seal lid. Close valve. 
  10. Pressure cook on High for 4 minutes for 1 mold, or cook on High for 6 minutes for 2 molds. 
  11. Once the Instant Pot is done cooking, allow the pressure to release naturally for 10 minutes. After the 10 minutes, release manually. 
  12. Take out the molds from the Instant Pot and place on a cooling rack for another 10 minutes. Place then in the refrigerator for 10 minutes, and then the freezer for an hour. 
  13. Pour dulce de leche on top of each bite, serve, and enjoy!!

  • Can my dog eat Dulce de Leche Cheesecake? Dulce de Leche or Cheesecake should never be a dog's dessert. First of all, is because high levels of sugar in this dessert can produce several health problems for your dog. Then, dogs have a lower recognition capacity for sweet flavors than humans, so giving Dulce de Leche Cheesecake to your dog is a waste by all accounts.
  • Can my cat eat Dulce de Leche Cheesecake? It is a very bad idea to give Dulce de Leche or Cheesecake to your cat. First, because your cat does not have the ability to digest high amounts of sugar without affecting its health, whether in the short or long term. Then because cats are carnivores by nature, and desserts do not add any nutritional value to their diet.
