How to Make
Sauté | Add in our oil and onions and sauté until the onions are softened and break down a bit. Then you will stir in the garlic and mix until fragrant.
Cook | Now add in your chicken stock and stir well to remove any stuck-on bits. Then add in the rest of the ingredients listed below. Once all the ingredients are added, cook for 10 minutes on high followed by a quick release.
Stir and Serve | Mix well and serve up with your favorite toppings. More shredded cheese, sour cream, avocado, etc.

- Rice strainer | Cooking rice in a pressure cooker means rinsing rice is a critical step in the process. This rice strainer is ideal because it has fine holes in it so the grains of rice won't slip through. What Is The Best Rice To Use for Chicken and Rice Burrito Bowl
I recommend using medium or long-grain white rice. If you swap out the rice you need to make sure the cooking time and liquid to rice ratio are proper.
Items like brown rice require a different method, so make sure if you do a swap, you convert the recipe.
Storing Leftovers
This Instant Pot chicken burrito bowl is really great leftover. The flavors blend even more, so the next day you have a super tasty lunch to heat up.
You can heat leftovers in the microwave for a quick reheat. Or if you do the stovetop I suggest adding in a splash of chicken stock to help ensure the rice doesn't dry out as it heats up.
Can I Use Ground Chicken for a Chicken and Rice Burrito Bowl
If you want you can swap cubed raw chicken with a ground chicken. Just toss your chicken in when you saute the onions and cook until the ground chicken is fully cooked.

This Mexican-inspired chicken and rice dinner recipe is so easy to make and is made with easy to find ingredients. Chicken, corn, beans, rice and salsa form the base of this frugal family dinner recipe.
Ingredients
Supplies to make the best Chicken and Rice Burrito Bowl
- Rice strainer
- Meat cleaver
- Chilled condiment serving station
- Indoor herb growing kit
- Instant Pot DUO
- Garlic Press
- Electric Salt and Pepper Grinder
Instant Pot Burrito Bowl Ingredients
- 1 1/2 tablespoons canola or vegetable oil
- ½ medium yellow onion, diced
- 1 tablespoon garlic, minced
- 1 cup low-sodium chicken broth, divided
- 1 tablespoon chili powder
- 1 1/2 teaspoons ground cumin
- 2 boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 (15-ounce) can black beans, drained
- 1 (15-ounce) can corn kernels, drained
- 16-ounce salsa (or 16-ounce jar salsa)
- 1 cup long-grain white rice
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup coarsely chopped fresh cilantro
- Salt, to taste
- Pepper, to taste
Instructions
- Press “sauté” mode on your Instant Pot. Once your pot becomes hot, add in your oil, and onions. Stir occasionally for about 3-4 minutes until the onion starts to soften.
- While your onions are cooking, season your chicken breasts with salt and pepper.
- Add in your minced garlic. Stir for about one minute.
- Add in your chicken broth. Scrape any residue from the onion and garlic that made still remain on the bottom of your pot.
- Next, add in your chili powder, cumin, chicken breasts, Black beans, corn, and salsa. Mix well.
- On top of the mixture add your white rice. Press the rice grains into the liquid making sure that every grain is submerged.
- Press cancels on your instant pot. Close and lock the lid. Make sure that the valve is closed.
- Set your instant pot to high pressure for 10 minutes. Once the cooking time is complete, do a manual release by releasing the pressure yourself.
- Open the lid, and gently mix everything together. Transfer to bowls and then top with your favorite toppings. You can top with diced tomatoes, cheese, cilantro, sour cream, and more! Enjoy!
