Chicken with Artichokes is an easy recipe to make. One of the first steps is to prepare the artichoke.

How to Cook an Artichoke

If you're not familiar with how to cook artichokes, it's easier than you might think. Especially when using a pressure cooker.

Artichokes look intimidating, and beautiful. To cook these gorgeous green orbs, cut the stem off above the lower leaves.

Next, trim about 1/4 inch off of each petal. Use kitchen scissors and clip off the top of each petal. After that, cut the artichoke in half.

Prepare to Cook Chicken Thighs and Artichoke in the Instant Pot

For this recipe, a simple seasoning of salt and pepper is used. I love this set of sea salts and pepper because it allows me to change things up just a little bit from time to time. This Mediterranean spiced sea salt is also a fun way to mix things up.

Add oil to the Instant Pot and allow the pan to get hot on saute mode. Once it is hot, add the chicken and sear on each side. After than, remove the chicken and set it aside.

Toss the mushrooms, artichoke, and the onion and garlic powders to the pot and continue to saute for 3-4 minutes. Stir every 30 seconds to a minute.

Remove artichoke and mushrooms from the pan and deglaze the inner pot with water. Add in an Instant Pot steamer basket over the water.

Layer the chicken with the artichoke and mushrooms on top of it in the steamer basket. Set the Instant Pot to cook and dinner is almost ready!

Instant Pot Chicken and Artichoke Dinner Recipe with Mushrooms

Delicious Chicken and Artichoke dinner made in the Instant Pot. You will love this flavorful recipe. The artichokes and mushrooms really bring the taste to a whole new level.

Prep Time 10 minutes
Cook Time 25 minutes
Total Time 35 minutes

Instructions

  1. Set pot to sauté mode to heat oil.
  2. While waiting for the pot to get hot, season chicken with salt and pepper.
  3. Brown chicken on both sides without fully cooking it. Remove, set aside.
  4. Still in sauté mode, add artichokes, mushrooms, and onion and garlic powder. Stir.
  5. Add water and deglaze.
  6. Place steamer rack inside pot and chicken on the rack.
  7. Spread artichokes evenly over top of chicken.
  8. Cover and cook on high pressure for 8 minutes.
  9. Quick-release. Remove chicken, artichokes and mushrooms.
  10. Optional: Mix 2 teaspoons cornstarch with 3/4 tablespoon water. Add corn-starch slurry to the broth. Set pot to sauté mode; bring the liquid to a boil, stirring regularly until thickened. Use this as a gravy over chicken.

  • Can my dog eat Chicken and Artichoke with Mushrooms? Yes, your dog can eat chicken, artichokes, and mushrooms (of course, the mushrooms bought at the market) without posing any health risks. However, this recipe includes garlic and onion, ingredients that can be toxic to your pet and if you want to give it a little of this, it is advisable to eliminate them from the recipe.
  • Can my cat eat Chicken and Artichoke with Mushrooms? Any of the three ingredients mentioned above are harmless to your cat. However, you should consider eliminating garlic and onion from this recipe before giving it to your cat, as these ingredients are indeed harmful to him. Then, before your cat tastes mushrooms or artichokes for the first time, do a test to see that he is not allergic, giving him a bit to see how he reacts.     1. Thanks for catching that! I was working on developing a couple recipes at the same time and that was a typo, which has been removed. You could certainly add spinach to this recipe, or serve on the side, but its not an ingredient in this specific recipe.

  1. Your recipe said to remove onions and mushrooms before pressure cooking. No mention of when to add it back, can you clarify?

    1. Hi Del! Thanks for the question. I updated the recipe because I've made it again since I originally posted the recipe and pressure cooked the artichokes and mushrooms along with the chicken. Remove everything but the liquid at the end, and then you can make a gravy with the sauce. The recipe instructions are updated on the post.
