For this recipe, you'll pressure cook the diced cheesy potatoes for just one minute. Keep in mind that the potatoes are cooking during the time the pressure cooker is building up to pressure and also when the pressure is being released.

This recipe is for Instant Pot diced potatoes, which is why the cooking time is so little. If you were to cook this recipe with thicker pieces of potatoes, you'd use a longer cooking time.

However, diced potatoes are perfect for a cheesy hashbrown potatoes recipe.

What is the difference between scalloped and au gratin potatoes?

Creamy au gratin potatoes are basically sliced potatoes cooked in a cheese sauce and topped with cheese.

How to Make Cheesy Potatoes

  1. Turn Instant Pot on to saute mode and saute the onions and garlic together with butter for 1-2 minutes while stirring.
  2. Add in the broth and seasonings.
  3. Add shredded potatoes to an Instant Pot steamer basket and set this on top of the onions and broth. The will prevent sticking to the pot.
  4. Close the instant pot lid and turn the pressure valve to seal. Cook on manual high pressure for 1 minute.
  5. Allow for a quick pressure release and then add in the sour cream and cheese and dump the potatoes into the mixture. Stir it all together.
  6. Transfer to a small baking dish (8-inch square or similar) and top with bread crumbs.
  7. Turn on oven broiler on low. Broil on a low oven rack for 2-3 minutes.
  8. Remove from oven and serve.
