Instant Pot Cauliflower Leek Soup

This is such a great homemade soup recipe with an awesome and unique flavor. Not only is this a cold soup, but it's made using ingredients like goat cheese, cream cheese, and cinnamon as well.

When people traditionally think of soup, they automatically go to the hot soups in their minds but there is something to be said about a big bowl of cauliflower and leek soup!

I really think that once you try a bowl, it's not going to be enough. Go ahead and plan on at least two bowls of this awesome cauliflower leek soup recipe.

What does leek soup taste like?

Leeks on their own have a bit of an onion flavor but with this soup, that's a mild flavor note that comes through. Combined with the cauliflower, it greats a great texture and flavor that you'll really enjoy.

Is leek soup good for you?

Leeks are a great source of Vitamins. Anytime I can add more vitamins to my diet, I'm down to make that happen. Leeks also have fiber as well which can help with digestive issues.

Are leeks stronger than onions?

They're not. They're mild and don't have such a strong onion taste and traditional onions do. A lot of people eat them and don't have any issues.

How do you prepare leeks for soup?

Luckily, leeks are super easy to prepare. You just need to be certain that you wash them well, cut off the root part and the green part, and slice them however you'd like. You can then add them to your soup or other recipes easily.

Can I freeze Cauliflower Leek Soup?

You can try. Since there is dairy in the soup, there's a very good chance that it's not going to freeze well. And what that means is that it might have a funky texture when you unthaw to eat.

Instant Pot Cauliflower Leek Soup

You're going to love the taste and flavor of this Cauliflower Leek Soup! This is a delicious cold soup recipe that could also be served warmed up. Pair this with a sandwich or salad, or make this soup the main course. Leek and Cauliflower soup would also make an excellent appetizer soup.

Ingredients

Cauliflower Soup Ingredients

  • 3 leeks, white part only
  • 1 head cauliflower, chopped
  • 3-4 whole garlic cloves, peeled
  • 3 cups chicken broth
  • 1 teaspoon ground cinnamon
  • Salt, to taste
  • Pepper, to taste
  • 4 ounces goat cheese
  • 4 ounces cream cheese
  • 4 ounces grated sharp cheddar cheese

Instructions

    1. Put the cauliflower, garlic, chicken broth, leeks, and cinnamon into your Instant Pot.
    2. Close the Instant Pot lid. Turn the vent to sealing and hit the manual button on high for 9 minutes.
    3. When the cooking time finishes, do a quick release to let out the pressure. Next, take off lid carefully.
    4. Add in the cream cheese, cheddar cheese, and goat cheese. Stir until all melted.
    5. Use an immersion blender to blend the soup to a smooth consistency. You can also use a food processor if you don't have an immersion blender.
    6. Put the soup in a glass storage container with a lid and put it in the fridge until it is chilled. Serve cold, topped with bacon or other fun toppings.

Notes

Although this is meant to be a cold soup, you can also serve it warmed up. It would be similar to a basic cream soup, with a cheesy cauliflower and leek flavoring to it.

Use this soup as a starter for a larger meal, serve along side a sandwich or salad, or make it the center of a meal along with a slice of our Instant Pot French Bread.
