I get asked all the time why to use an Instant Pot. Well, the simple answer is the flavor. This chicken really infuses with the sauce so you have an incredibly flavorful sauce.

What Cut Of Chicken to Use

This is a fantastic Instant Pot Chicken Thighs recipe. Or if you prefer a boneless chicken go ahead and dice it up for bite-size pieces of chicken. Either boneless skinless chicken breast or thigh meat works good.

Can I Make Butter Chicken with Coconut Milk Instead of Heavy Cream?

Yes, real Thai coconut milk is an amazing ingredient for low carb butter chicken. Now, the sometimes you might open the can and find the coconut milk separated.

Give it a quick stir and it'll come back together. OR, if you only need to use some of it for the recipe, scoop off the coconut cream settled on top and use that along with some of the liquid.

Store leftover coconut milk in an airtight container in the refrigerator and use it within 1-2 days.

Coconut milk is easy to store since it comes in shelf safe cans and doesn't have to be refrigerated prior to opening. It might also be more readily available than heavy cream, depending on where you are located. Not to mention, heavy cream is very expensive from time to time.

Recipe Ingredients

  • Chicken (use boneless skinless thighs or skinless chicken breast meat)
  • Indian curries - this recipe uses Garam Masala or Tika Masala
  • Tomato sauce
  • Butter
  • Coconut milk or heavy cream
  • Water or chicken broth

How to Make Butter Chicken

This is a very easy recipe to make, and might quickly become a favorite on your weekly meal plan rotation.

Step One: Add the water, tomato sauce, and seasonings to the Instant Pot and mix together.

Step Two: Add the chicken, seal the Instant Pot, and then cook on high pressure for 6 minutes. You don't even need to marinate chicken before you cook it.

Step Three: When the cooking time finishes, let the pressure release naturally for 5 minutes then quick release the remaining pressure.

Step Four: Set the Instant Pot to the sauté mode so it will be on a medium high heat. Add in the heavy cream or coconut milk and stir to let the butter sauce thicken.

This butter chicken meal comes together in under 30 minutes. You can either cook rice beforehand and warm it back up, or you could cook rice on the stovetop.

Can I Double This Recipe?

If you have a larger sized pressure cooker you should be able to double. Just always watch the max fill line on our Instant Pot.

So feel free to whip up a double batch to serve a crowd. This recipe does not freeze as the sauce can curdle up a bit. It is best when served warm or fresh.

But you can reheat Instant Pot curry chicken and rice for that quick dinner or lunches on the go. Just place in personal containers for an easy grab and reheat meal. Or pack and take for your lunch with your favorite sides on the side.

Instant Pot Butter Chicken is an Indian-inspired curry recipe served over rice.

Prep Time 5 minutes
Cook Time 6 minutes
Additional Time 5 minutes
Total Time 16 minutes

Instructions

    1. Add the water, tomato sauce, minced garlic, curry powder, Garam Masala, paprika, onion powder, sugar and salt to the Instant Pot and mix together.
    2. Add in the diced chicken thighs and butter on top.
    3. Cover your Instant Pot, seal, select pressure cook / manual setting, high pressure and set the timer for 6 minutes.
    4. When done, let the pressure release naturally for 5 minutes then quick pressure release the rest of the pressure.
    5. Set the Instant Pot to the Sauté mode mix in the heavy cream and simmer till the butter sauce thickens to your taste.
    6. Switch off the heat and serve.

Notes

Try this butter chicken over some rice and a side of salad.

FAQs:

  • Can my dog eat Butter Chicken? Even though your dog's diet is based on meat and would probably enjoy some of this chicken. It is best if remove or wash out the sauce and condiments that this recipe brings. This mainly because Garlic and Onion are very toxic to your pet. Also, giving sugar and fat is not good too.
  • Can my cat eat Butter Chicken? Well, maybe your cat would like to try some of this chicken. However, it is advisable to remove garlic and onion from your cat's serving, as these foods are highly toxic to your pet's health. Also, remove strong seasonings, sugar, and butter due to the high levels of fat and the dairy base, as they are also not common in your cat's diet.
