What I really enjoy about this Instant Pot Beef and Rice recipe is that it has a bit of heat to it. (this doesn't mean it HAS to, but the ingredient list does work in that option)

You can also cut up a lime and squeeze a bit of that fresh lime juice over the top as well. This creates a super fresh taste that really enhances the overall flavor.

There's just something about the way that rice and lime go together perfectly in most recipes, right?!

Do you have to marinate the beef for this Instant Pot beef stew meat and rice recipe?

I would. Marinating the meat is only going to give it that much more flavor and taste. If you have the time to marinate the stew meat overnight, do so. The longer you can, the better. But no longer than 24 hours - that is too much!

And if you can't marinate it for a bit before cooking, no worries. It's not a requirement that has to be done at all. You can always add more seasoning at the end to bring out the flavor if you need it.

Since this recipe already has a lot of texture and flavor, lighter toppings tend to be a better choice. More sesame seeds, chopped chives, and even some fresh cilantro all make for great toppings for sure.

Can you overcook rice?

Yes, you can. But to be fair, some people prefer their rice to be different textures so all might not be lost if you do overcook it.

This recipe calls for cooking the rice for 22 minutes, but you can always extend that and create softer or mushier rice as well.

Instant Pot Stew Beef and Rice

Don't miss out on the tastes and flavor of this Instant Pot Beef and Rice! This is a terrific easy Instant Pot dinner recipe made with rice and stew beef.

    1. Mix together the soy sauce, honey, lime juice, 2 tablespoons of sesame oil, garlic powder, onion powder, fresh ginger, and red pepper flakes into a bowl. Set aside.
    2. Put the cut-up beef cubes into a plastic bag that you can seal and pour the marinade in. Seal the bag, turn the bag around to coat the meat. Leave at room temp to marinate for 30 minutes or put in the fridge to marinate overnight. If you can, turn the bag occasionally to move around the liquid.
    3. Put 2 tablespoons of the sesame oil in your Instant Pot.
    4. Press the sauté button and change the setting to high.
    5. Once the pot is hot, put the beef cubes inside. Brown on all sides which should take about 3-4 minutes.
    6. Dump in the beef broth or water and scrape the brown bits that are on the bottom, too.
    7. Turn off your Instant Pot and add in the rice. Put on the lid and lock. Put the pressure valve to sealing and press manual. Adjust to high and cook for 22 minutes.
    8. Once that is done, let the pressure release naturally for 10 minutes then do a quick release.
    9. Carefully take off the lid and use a fork to fluff the rice. Put the beef and rice Instant Pot recipe on a platter and top with sesame seeds and chopped parsley.

For all: Instant pot rice mode is not great for rice its to long. for the rice you expect you mix equal parts rice and water I use jasmine 2-3 minute maximum on high pressure and let natural release for 10 minutes. Rice will be perfect every single time. This took experimentation and about 4 cups of rice to experiment with. I hope this helps (ALWAYS RINSE THE STARCH OFF OF YOUR RICE THOROUGHLY) Your results will be amazing.
