Ingredients:
- 2 Tbsp olive oil
- 1 medium purple onion (diced into small pieces)
- 4 medium carrots (sliced)
- 3 stalks celery (diced)
- 4 sprigs fresh tarragon
- 1 tsp salt
- ¾ tsp paprika
- ½ tsp pepper
- ¾ C green lentils
- ¾ C red lentils
- 2 Tbsp minced garlic
- 2 (15 oz) can fire-roasted diced tomatoes
- 4 C vegetable broth
- Chopped parsley
- Parmesan cheese
Instructions
- Start by adding the olive oil to the Instant Pot. Set the Instant Pot to “Saute.”
When the oil becomes hot add the diced onion, celery and carrots. - Stir often as the onion mixture cooks.Cook for about 8 minutes or until the onion becomes soft and begins to turn brown.
- Next, toss in the tarragon, paprika, salt, and pepper.
- Continue on “Saute” for 2 minutes then add the lentils and garlic. Stir to coat the lentils with the seasonings already in the pot. Cook for 30 seconds,
- Add in the tomatoes and broth.
- Cover then seal the Instant Pot setting to cook on High Pressure for 15 minutes.
- Let the Instant Pot release pressure naturally. (About 10-15 minutes)
Remove the lid. - Once done stir, and then dish up this Instant Pot lentil soup.
Notes
I used a mix of red and green lentils for flavor.
Plain diced tomatoes work if you don't have fire roasted.
Store leftover soup in the fridge for 3-4 days.
