If those enchiladas and tacos get you all drooling and you’re in the mood for some Mexican takeout, but still don’t want to mess up with your efforts to practise healthy eating, here’s a bit of help!

Can I Use Other Beans Instead for Instant Pot Chicken Tortilla Soup?

So this recipe calls for black beans, but if you’ve run out of those, or are just looking to experiment a bit with different variants, there are a couple of other great options- red beans and pinto beans.

Both of these are super healthy and incredibly versatile. They taste excellent and are packed with nutrients too.

How Do I Make it a Complete Meal?

So right now, the soup is moderately filling, but there are ways you can turn that around and make it a complete meal too.

Throw some cooked rice into it after you’re done making the soup, and you have a hearty bowlful of a filling meal ready.

Topping Ideas for the Soup

And what’s an Instant Pot Chicken Tortilla soup without some delicious toppings? I like to serve these best with tortilla chips, a generous helping of grated cheese and sour cream.

I feel sour cream really brings out the tangy and spicy flavors of the soup, and strikes the right balance.

Can I Make and Freeze This Soup?

If you’ve tried making this soup and loved it, and want to make it again but don’t want to spend a lot of time prepping the ingredients again, making it in a huge batch and freezing it might seem like a good option.

While it is best to have this soup fresh, you can always consider freezing it in batches in your freezer too. That way, you just need to thaw and reheat the soup when you’re looking for a quick meal fix.

Instant Pot Supplies We Love

  • Instant Pot Inner Pot - I like to have an extra inner pot available because of how much cooking I do in my Instant Pot. It comes in really handy when I want to put a lid on the inner pot and refrigerate the leftovers, or mix up ingredients the night before to save time at the end of the day.
  • Silicone Lid for Instant Pot- I'm not sure how I lived without this one. Having a silicone lid for my Instant Pot has made life so much easier. It is perfect for adding ingredients a day or two ahead of time.

How Do You Thicken a Tortilla Soup?

One of the simplest ways to thicken up a soup is to make a simple paste using flour and water, and add it to the soup while it is just about to boil, and then keep stirring continuously.

With this recipe, we’ve not used any thickening agent, but if you don’t like your soup to have that runny, watery consistency, this simple step could really help.

Serving Ideas & Suggestions

Mexican soups are super versatile- you can team them up with almost anything. They taste great with a side of corn salad or a coleslaw or even with some cheesy quesadillas.

Plus, they’re an absolute crowd pleaser too. They are an absolute hit in parties and perfect for a cozy dinner with friends.
