Since the first time my family devoured their bowls and asked for seconds, I've taken to referring to this as chicken crack chili. One bowl is never enough and it's requested at least once a month now!

With a base of white beans, rotisserie chicken, and vegetables, it is light AND creamy at the same time. With lots of protein, veggies, and just a bit of cream cheese, it's a balanced meal that feels like comfort food.

This is actually a recipe for gluten free white chicken chili - just be sure to double-check the label on the rotisserie chicken or use boneless, skinless chicken meat. Chicken thighs work wonderfully for this recipe.

In addition to being a gluten free chilli, this is also a keto white chicken chili recipe!

While I am neither gluten-free nor keto, it's nice to have easy AND tasty recipes on hand when I'm cooking for guests who are. Being keto, gluten free, healthy AND delicious makes slow cooker crack chicken chili an ideal meal to make for any house guests.

Pro-tip: Make a double batch for leftovers, meal prep and to freeze! I promise you'll regret it if you don't (I always do, at least)!

  • Rotisserie chicken
  • Yellow Onion
  • Minced Garlic
  • Chicken Broth
  • Great Northern Beans
  • Diced jalapenos
  • Whole kernel corn
  • Salt
  • Black pepper
  • Mexican bouillon cube
  • Chili powder
  • Cayenne pepper
  • Fresh cilantro
  • Cream cheese

How To Make Crockpot White Chicken Chili

Making this low carb white chicken chili is beyond easy. It's right up there with my Crockpot Cowboy Casserole on the list of easy crockpot recipes - and, honestly, since this uses pre-cooked chicken, it may be even easier!

To make this white chicken chili recipe with cream cheese, place the fully cooked rotisserie chicken meat in the bottom of your crockpot. You could also use meal prepped Instant Pot chicken, if you happen to have that on hand.

Add all of the ingredients EXCEPT for the cream cheese - onion, garlic, beans, jalapeno, corn, chicken broth, and cilantro, followed by all of the seasonings.

Stir well to combine and then cook on high for 3 hours or low for 6 hours.

At the end, stir in the cream cheese and cook for an additional 15 minutes.

Serve into bowls and enjoy!

Variations of this Healthy White Chicken Chili:

I made this white bean chicken chili on the more flavorful side, by adding in jalapenos and green chilis. If you prefer less spice, omit the jalapenos or add them into the individual bowls.

Also take note when purchasing green chilis as there are several degrees of spiciness. If you want it spicier, add your favorite hot sauce into your bowl.

If you don't have Great Northern Beans, you can use any white beans or even black beans. Be sure to drain black beans well so they don't change the color of the chili.

You can also make this crockpot chili with leftover turkey instead of chicken.

FAQs

Can you freeze White Chicken Chili?

Yes! This chili is one of my favorite healthy crockpot freezer meals! Follow the instructions above, just don't add the cream cheese.

Allow to cool completely and divide into freezer-friendly containers. Thaw overnight in the fridge and then add the cream cheese when reheating.

Can I use uncooked chicken to make this gluten free chili?

Yes, you can also make this recipe with boneless skinless chicken meat. You'll just need to shred the chicken before adding the cream cheese. If using raw chicken, increase the cooking time by 1 hour and ensure it's cooked thoroughly at the end.

How To Thicken Chili

To thicken chili in a slow cooker, you can create a slurry of one part cornstarch to two parts water, add it to the chili, and turn the crockpot on high.

You can also turn the crockpot on high, take the lid off, and let it cook for 20 minutes or so.

Cornmeal and masa harina also work to thicken up chili and do not need to be mixed with water first, though they can slightly change the texture.

Other simple ways to thicken chili include adding more beans or mashing the ones already in the chili or adding cheese. In the case of this creamy chicken chili, you can add just a bit more cream cheese or some shredded cheese.

Instructions

  1. Add the chicken to the bottom of the slow cooker.

  4. Cover and cook on HIGH for 3 hours or LOW for 6 hours.
  5. Add cream cheese, and stir, then cover and cook on HIGH for 15 minutes.
  6. Garnish and serve.
