In my quest for easy crockpot recipes, I discovered this Crockpot Tuscan Tortellini Soup. It's quick, it's easy and it's hearty enough to fill up a crowd.

Whenever I make this for my family, almost everyone goes back for a second bowl and leftovers disappear in a day.

This Crockpot Sausage Tortellini Soup is made with, you guessed it, sausage and tortellini.

But there's actually quite a few veggies hidden in there - tomatoes and spinach - plus beans with a chicken broth base.

As far as crockpot soup recipes go, this Rustic Italian Tortellini Soup is on the healthy side. Of course there's some carbs and cheese in the tortellini (yum!) but with a broth base instead of a creamy one and all of the veggies, it's a meal there's no regret for.

Like all of the best easy crockpot meals, this one requires little hands-on time. We use pre-cooked sausage so there's no need to cook it before adding to the slow cooker and the tortellini comes straight from the fridge. With the exception of needing to chop the onion, all ingredients in this cheese tortellini soup are dump-and-go.

I love dinners where I can add everything to a crockpot, walk away, and come back to a delicious dinner that's ready to be served.

Technically, you have to come back to this tortellini soup once, to add the tortellini...but that literally takes 10 seconds. Worth it.

However, if you don't want to use a crockpot, I've included stovetop directions for this easy tortellini soup below. It's almost as easy to cook on the stovetop as it is in the crockpot!

How To Make Crockpot Tuscan Tortellini Soup

To make this slow cooker tortellini soup, add all ingredients except for the olive oil, tortellini and toppings to your slow cooker.

Cook on low for 4 hours. Add the tortellini (it should be refrigerated, not frozen) and cook for another hour.

Serve hot. I recommend topping with a drizzle of olive oil, parmesan cheese and parsley.

How To Make Tuscan Tortellini Soup On The Stovetop

To make this Italian sausage and tortellini soup on the stove top, begin by sauteeing the onion in olive oil until soft, in a large pot.

Add in the sausage bites and cook until golden brown.

Add the garlic. Cook for an additional 1 minute.

Add the tomatoes, chicken broth or homemade bone broth, red pepper flakes, salt and pepper.

Allow the soup to come to a boil.

Add in the tortellini and reduce to a simmer for 20 minutes.

Stir in beans and spinach. Cook for an additional 2 minutes, until spinach has wilted.

Serve immediately. Top with parmesan and parsley.

Crockpot Tuscan Soup Variations

While I appreciate the added flavor from the sausage, you can easily switch out sausage for chicken in your Tuscan soup.

If you want to make vegetarian tortellini soup, omit the sausage. You can replace it with a meat substitute or enjoy as-is for an easy vegetarian crockpot soup.

How To Make a Creamy Tortellini Soup

I opted to make this a healthy tortellini soup and used just chicken broth for the liquid. However, if you are looking for a creamy version of this tortellini soup, replace 1 cup of chicken broth with half and half or heavy cream.

How To Store Tortellini Soup

You can store this tortellini soup in an airtight container in the fridge. It will last for up to a week.

Can You Freeze Tortellini Soup?

This Italian Sausage soup freezes well with one catch...you need to leave the tortellini out. If you plan on freezing this soup, follow the directions and cook up to the point of adding the tortellini. Allow to cool, transfer to an airtight container, and freeze.
