If you're looking for easy crockpot meals, this Crockpot Cowboy Casserole recipe is one you must try! With the base of a tater tot casserole, ground meat, and canned veggies, this is a comforting meal that feeds many and leaves everyone satisfied!

Cheap, easy crockpot meals are the name of my favorite game in the kitchen. Bonus points if it's also a kid-approved crockpot meal.

Anything that I can whip up with a minimal effort that the kids eat without complaint is a major win in my book.

This Cowboy Casserole with potatoes is all of those things and more. It's cheap, easy, healthy, and FULL of flavor! The kids love it, the husband loves and I love it.

Better yet, this recipe makes a ton so there's always leftovers the next day and I swear it tastes even better then!

The ingredients list to this crockpot casserole is long but don't worry - I guarantee you have most of the ingredients in your pantry AND 90% of them come in a can.

How to Make Cowboy Casserole

As long as I have the basics - ground meat (beef or turkey), potatoes, a few veggies and spices - I don't stress too much about the specifics if I'm making this in a pinch. If I don't have fire roasted corn, I use regular corn. If I don't have baby carrots, I leave them out.

Part of making cheap easy crock pot meals, in my opinion, is utilizing the ingredients you have and not running to the store because you forgot to grab a can of a supporting ingredient.

Also, while I used baby red potatoes for this recipe, I do want to note that you can also substitute with frozen taters and adjust the cook time accordingly. The tater tot casserole recipe version of this is an extra big hit with the under 12 crowd.

Make This Kid-Friendly Cowboy Casserole

When it comes to cheap crockpot meals in general, I've found crockpot casserole recipes and/or crockpot meals with ground beef to be the cheapest and easiest, like this Cowboy Casserole.

Ground beef is one of the cheapest meats you can get for dinner and a little goes a long way, especially when you pair it with potatoes which often appear in crockpot casserole recipes.

If you don't eat beef, ground turkey slow cooker recipes are often just as easy and in most recipes, including this one, you can change out ground beef and ground turkey.

As far as kid friendly crock pot meals go, Cowboy Casserole has quickly become one of my favorites. Kid friendly crock pot are often loaded with carbs, cheese and little else and this ground beef casserole loaded with veggies is a much appreciated and healthy change!

How To Make Crockpot Cowboy Casserole

This cowboy casserole slow cooker recipe is so easy to make. Like 3 steps easy to make! All you need to do is brown the beef, dump everything in the crockpot, and forget it.

Family crockpot meals are my favorite because dinner seriously can't get any easier than this.

  1. To make this slow cooker hamburger recipe, saute the ground beef and onion until the beef is browned. Drain well.
  2. Place the quartered baby potatoes in the bottom of the crockpot. Add in the meat, veggies, and beans, followed by the seasonings and sauce.
  3. Mix all ingredients together.
  4. Cook on low for 5.5 hours, checking to ensure the potatoes are fully cooked.
  5. Add shredded cheese and then cook an additional 25 minutes until the cheese melts.

Enjoy as a complete meal!

Can I use other types of beans?

Absolutely! Any canned or pre-cooked beans, including black beans, pinto, and navy beans, work in this cowboy potatoes recipe.

Is Cowboy Casserole spicy?

There are a few ingredients in this hamburger crockpot meal that add a bit of a kick to this recipe - specifically the jalapenos and hot sauce. Feel free to omit or adjust the amounts to your preferred level of spiciness.

As-is, this recipe is kid-approved and more flavorful than spicy. The potatoes and beef lighten up the flavor profile!

Easy Crockpot Cowboy Casserole

The flavorful blend of spices and chili peppers add a nice tingle to this cowboy casserole. This easy ground beef recipe will definitely become your most requested meal. Is irresistible!

Total Time 6 hours 15 minutes


  1. In a large saute pan add the ground beef and onions.
  2. Cook until browned, and drain.
  3. Place the potatoes in the bottom of a 3 1/2 quart crockpot.
  4. Add the browned hamburger, peppers, corn, tomatoes, and jalapenos, along with the kidney beans.
  5. Add in the black pepper, salt, garlic, chili powder, Worcestershire sauce, and hot sauce. Mix well all ingredients.
  6. Cook on low for 5.5 hours or until potatoes are done.
  7. Once the casserole is finished cooking, sprinkle on shredded cheese.
  8. Cook for another 25 minutes or until the cheese is melted.
