Recipe Tips & Tricks

  • You can easily double this recipe to feed a crowd. I love to do this on holidays because you end up with a side dish everyone loves without taking up oven space.
  • Creamed corn can also be made on the stove. Just pour the corn into a large pot or skillet, add the other ingredients, cover with a lid, then cook over medium heat until the butter and cream cheese are melted. Stir well and cook for a few more minutes on low heat.
  • Canned corn will give the recipe a different flavor, so stick with frozen sweet corn if possible.
  • Feel free to add ground pepper to taste as necessary. Some also like to stir in some crushed garlic. If you don't have crushed garlic, use one of these substitutions.

How to store crockpot corn casserole?

You can store this in the fridge for up to 3 days. Just be sure to keep it in an airtight container. You can make this recipe a day ahead for a Christmas dinner or other holiday meal, and it is perfect during the holiday season. Use nonstick cooking spray to ensure the crock pot corn casserole recipe doesn't stick to the slow-cooking pan.

Can I freeze creamed corn with cream cheese?

I do not recommend freezing this. The cream cheese texture of this corn recipe will change and won't be as smooth and creamy. But since it comes together in just a few minutes, I haven't found any reason to freeze it. The best part is that a regular family dinner is enough for this great recipe to disappear.

Serving Suggestions

You can serve this crock pot creamed corn for virtually any occasion.

Can I use fresh corn in a crockpot corn casserole?

If you have fresh corn from the garden, you can use that! A handful of corn cobs should be just enough.
