This Chicken Fajita Soup recipe is made with fresh, wholesome and delicious Southwest Soup recipe. It is a gluten free and preservative free chicken soup recipe.

  • 2 tablespoons of extra virgin olive oil
  • ½ medium red onion, sliced
  • 1 medium red bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 medium Poblano pepper, seeded and chopped
  • 1½ pounds of boneless, skinless chicken breasts
  • Sea salt, to taste
  • Ground black pepper, to taste
  • 1 14-ounce can diced fire-roasted tomatoes, keep the liquid
  • 3 cups of chicken broth
  • 2 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 2 teaspoon dried Mexican oregano
  • 1 teaspoon garlic powder
  • 1 15-ounce can black beans, drained and rinsed
  • 3 tablespoon fresh lime juice

Optional Southwest Chicken Soup Garnishes

  • 2 large avocados, sliced
  • 3 tablespoon of red onion, chopped
  • Shredded Mexican cheese blend
  • Fresh cilantro, chopped

Instructions

    1. Add the olive oil to the Instant Pot and hit the Sauté button. Put on high and add onion, bell peppers, and Poblano pepper. Stir continually until they get a bit of color, about 4-5 minutes. Switch to off and put veggies in a bowl for later.
    2. Season the chicken with salt and pepper on both sides. Put in the Instant Pot and top with the tomatoes, chicken broth, cumin, chili powder, Mexican oregano, and garlic powder. Stir together.
    3. Put on the lid and put the pressure valve to sealing. Push manual on high and cook for 10 minutes. When done, let the pressure release naturally for 10 minutes. Then quick release any pressure left.
    4. Take off the lid, shred chicken. Add in the sautéed veggies, lime juice, and black beans. Stir.
    5. Let the Southwestern Chicken Fajita Soup sit on warm for several minutes until the beans and veggies reheat.
    6. Garnish with optional toppings.
