Chicken and Rice Recipe - an Instant Pot Chicken Recipe

Instant Pot Chicken and Rice is one of my favorite weeknight meals. A kid-friendly chicken breast Instant Pot recipe that is loaded with chicken, rice, in a creamy base. Whip up this dish for dinner tonight.

INSTANT POT CHICKEN AND RICE

Chicken and rice have always been a favorite comfort food. You can use chicken breasts, tenders or make this a chicken thighs recipe. You just want boneless chicken that you can dice or shred up.

How To Make

Start by cooking your chicken if you are using raw chicken. The directions for this are in the printable recipe card below, and check the recipe notes for additional details.

Now if you are ready you will put butter in the Instant Pot on sauté and add in your garlic. Add in your cooked diced chicken, chicken broth, lemon juice and white rice. I always add in a little bit of the liquid first after sautéing and scrape the bottom of the pot to make sure to deglaze anything that might be stuck on.

You can also add in some onion powder if you're so inclined, although our recipe doesn't call for it. Just a 1/4 teaspoon adds a nice bit of flavor.

Stir to ensure it is mixed and rice is covered. Turn the Instant Pot to high pressure and make sure the lid is set to sealing and cook for 10 minutes with a 5-minute natural release. With the coming to pressure, cooking and release time you're looking at about 20 minutes for a one pot meal that is amazing.

Once you remove the lid, add in your parmesan cheese, salt, and pepper. Pair with all your favorite sides and dive in!

Rice cooked in the Instant Pot is amazing. You can certainly cook this meal in a slow cooker, but I prefer the Instant Pot.

What To Serve With This Chicken Recipe

We tend to do a vegetable to go along with the rice to help lighten it up! The family always enjoys this recipe.

Can I Add Vegetables Into The Mixture

Go right ahead and add in broccoli, corn, or other veggies you might want. The one thing is to make sure that if it is a softer vegetable just stir it in once you are done cooking.

Then place the lid back on and let it sit 5 minutes or so. This will help soften the vegetables up without overcooking them in the pressure cooker.

What Is The Best Rice To Use

For this recipe, I used long-grain white rice. If you were to swap it out without a different type of rice, you have to remember the ratios are different.

You also want to rinse rice that you cook in the Instant Pot.

Brown rice will need a longer cook time and different liquid to rice ratio. So make sure to convert the recipe depending on the type of rice you pick. Or stick with what I have and follow the recipe as directed.

Can I Double This Recipe

If you have a larger sized pressure cooker you should be able to double the recipe no problem. Just always watch for the max fill line and ensure you don't go over the line.

If you add more you might need to slowly release the pressure with a towel in case stuff starts to foam out of the mixture.

Instant Pot Chicken and Rice

Instant Pot Chicken and Rice is a chicken thighs or chicken breast recipe. This easy and flavorful Instant Pot dinner recipe is a winning recipe in our house.

Instructions

    1. Turn the Instant Pot to sauté and wait for it to get hot. Add in the garlic and butter. Stir and let the butter melt.
    2. Cook the chicken to cook on all sides. Stir occasionally to make sure the chicken is cooked all the way through.
    3. Turn off the sauté mode by choosing cancel.
    4. Add lemon juice, chicken broth, and white rice. Stir ingredients together.
    5. Turn your Instant Pot on High Pressure for 10 minutes. Do a natural release for 5 minutes and then let the remaining pressure out.
    6. Open the Instant Pot carefully, and then add in cheese, salt, and pepper. Stir to mix well.

Notes
