Instant Pot Loaded Baked Potato Salad

This is the best-loaded baked potato salad that you'll ever make! The delicious blend of shredded cheese, potatoes, and other yummy ingredients will blend to create this magical side dish for your next gathering. Waxy potato is the best option for this recipe, it's firm quality and texture will help your loaded potato salad taste and look perfect. This instant pot potato salad can stay on the fridge for several days before serving, this lets seasoning set and gives a better flavor on every bite.

Prep Time 8 minutes
Cook Time 7 minutes
Total Time 15 minutes

Instructions

  1. Add oil to the instant pot and turn on to saute.
  2. Add in the potatoes and roast them for 6-8 minutes, stirring on and off to
    ensure all the potatoes are lightly roasted.      
  3. Remove potatoes and place them in a steamer basket.       
  4. Add 1 cup of water to the Instant Pot inner pot and then place the steamer basket with the potatoes in the pot.
  5. Close the lid on the pressure cooker and turn the valve to the sealing position. 
  6. Set to a manual high time for 7 minutes. When the cooking time has finished, do a quick pressure release.      
  7. Transfer potatoes to the refrigerator to cool quickly.  When they are cool to the touch, half and quarter the potatoes depending on the size of the potato.
  8. In a large bowl, mix potatoes together with the remaining ingredients.
  9. Season with salt and pepper.
